@Tony Glad it all worked out for you. Ginger beer often won't throw up a big Krausen like beer when fermenting so you always have to test with a hydrometer to be safe. Good luck with the modifications part of ginger beers allure is how easy it is to make all sorts of additions like honey and spices. Best just to try everything until you find that "perfect" recipe.

Ooops...yes I jumped the gun on this one a bit...took your advice and did an SG and it was perfect for bottling.

The no throthy bit had me perplexed until I did some further reading and found out that GB brewing is a bit like that.

Thanks Admin...its a simple recipe I shall be tweaking to suit my personal tastes in the future.

@tony I can personally vouch for the recipe, some recipes use Cream of tartar to balance the acid some don't. As for using sugar its required if you want the fizz and alcohol, as long as the yeast has eaten all the sugar from the primary ferment and you don't over prime when bottling you will be safe from "bottle bombs". Boiling rather than grating is one option although some people feel boiling for extended periods will lessen some of the aroma and taste. Not sure how you are checking if its fermenting, its an idea to go to a brew store or Big W and get a hydrometer if you don't have one already as the change in in specific gravity is the only sure fire way to test if its fermenting or not.

Can anyone actually vouch for this recipe...I tried it and nothings happening...I even tried adding more yeast after several days and still nothing a week later.
I checked out other GB recipes and none mention "cream of tartar" but all suggest its not a good idea to use plain sugar as a bottling up fizz producer as it tends to make the bottles explode...but not having reached that stage I can't vouch for that advice.

Yes it would be a nice simple recipe and even simpler if you just boil all the chopped ingredients and filter instead of farting around with grating as is suggest by the mainstream home brew suppliers.

Oh and yes I followed the rules and have fermented plenty of basic beer before without any failures.

Yeah it turns out between 5 - 6% Alcohol depending on how accurate you were with measuring the sugar, and what the exact strain yeast you used.
